The Grecian Grazer

The Grecian Grazer has quickly made a name for itself in Downtown Parker. Opening in 2025, patrons can find a mix of New York-style deli favorites, including sandwiches, gourmet cheeses and meats, and Mediterranean-inspired specialties. Founder and CEO Sean Gunbil describes the concept simply: “We’re a New York City-style deli. We do big sandwiches, and we also have a passion for charcuterie boards. We’re also a gourmet cheese and meat shop with Italian and Greek influences.”

Known for their hearty portions, the shop encourages guests to embrace the authentic deli experience. As Sean puts it, “These are true New York-style deli sandwiches, so come prepared for that. We encourage people to try and finish them here, but most likely you'll have a little snack for later, where you can you can share it with somebody, or enjoy it on your own.”

For the Gunbil family, choosing Parker as their home for the business was a natural choice, “This is Parker. It’s who we are, and we wanted to be where we live,” Sean explains. “We decided, let’s look at a place that we are very fortunate to call home. There could be no other place for the Grecian Grazer to be.”

Sean adds, “I couldn’t imagine doing this anywhere else. The spirit of the community definitely lives through us and our story here.” The Parker community has embraced the Grecian Grazer, even suggesting new sandwich ideas. Patrons find a welcoming space in turn. “The people of Parker are very supportive.  the community comes together and lifts up new businesses.” 

Blending “old traditions mixed with modern ideas,” Sean believes this combination builds not only a business, but a community around it. “At the end of the day, for us, the best collaboration is the people and our customers. And that’s what we’re here for.”
