Legends Coffee

Jacob and Tabitha Wickline built Legends Coffee around an idea, "The greatest stories and legends ever told are usually told over a cup of coffee. Our aim was to be able to give people a place to be able to unfold and tell their story."

The couple's interest in coffee grew out of years working as baristas. They began serving coffee at the Southlands Farmers Market in 2014 and later opened their first café in Aurora. After searching for the right space for several years, they opened their second location in Parker in 2026.

The reason for the choice goes beyond numbers. Jacob comments, "Parker just has an amazing feel. It's grown tremendously, but it still has that small town feel, and they protect their own, and they're very, very good at supporting the hometown heroes."

Legends serves specialty coffee and makes all of its syrups and sauces from scratch. The seasonal menu changes every two to three months based on what's in season. The Wicklines also focus on ensuring they have a full picture of where they source their coffee, including a recent trip to Guatemala to visit coffee farms. "It's a beautiful thing when you can know exactly what farmers grew and invested in the cherries that we're serving here, and we're the last hands that get to be able to serve them," Jacob said.

Relationships are central to the business. Wickline estimates that staff know about 90 percent of customers by name. "My staff is really what shapes the culture of what Legends is," he said. "I'm just right alongside them, helping them support."

Jacob sees the Parker shop as part of the town's wider coffee scene rather than a rival. "It's community, not competition," he said. "The more people that understand good quality coffee and sourcing good coffee and present good coffee, they're going to be able to seek that out at as many cafes as they can."
